Food Service Advisory Board

March 22, 2006

Jeff Davis opened the meeting at 12:13 p.m.  December 9, 2005 meeting minutes were distributed.

 

Approval of minutes: Approval of minutes from December 9, 2005 with a correction on Janette Freyre's name spelling.  A motion to approve minutes was made by Pam Mercer and seconded by Sean Flaherty.

 

Sodexho change in management: Jeff noted that Greg Soukup was removed as General Manager from our operation. Russell Saunkeah, Sodexho Catering Manager, will be the acting General Manager until the hiring process is completed. The position has been posted with Sodexho both internally and externally. Three candidates have been selected for interviews. The interviews will be held the week of April 10, 2006. Jeff noted that Sean Flaherty and Kathy Griffith will be a part of the interview panel. The candidates will meet with Residence Housing students, Sodexho line staff and Sodexho management staff in addition to the interview panel.

 

When Greg was selected for the General Manager position, this committee did not feel that it had adequate time to request additional candidates. This time, the interview panel will have time to ask for additional candidates if they are not satisfied with the initial three.

 

Jeff asked that if anyone else on the committee would like to be a part of the interview panel, please contact him. Making a commitment to be a part of the interview panel requires that you attend all three interviews.

 

Sodexho. Freshens area of the Overlook Cafè will have refreshed signage and menu selections on March 23, 2006. Freshens will have less low-cal selections and more nutrition based selections. Jeff noted that he is working with Sodexho for the format for the Recreation Center. There will be a Freshens / grab 'n go area with espresso drinks. Dwire Hall construction will have a coffee / grab 'n go area also. Jeff noted that he spoke with Freshens representatives at the ACUI regional conference in Kansas City last week.

 

Jeff noted that the food service operation on campus is not where it should be. The website is not up to date, weekly specials are not announced on a regular basis, advertising is not what it should be.

 

Jeff asked how the committee used the Munch Money and what was their experience. Pam noted that overall the food selection was good, but that there were some delays at registers at the Overlook. Samantha Villarreal noted that a student stated she stood 10+ minutes in line at the Overlook cashier. There were also comments about customer service and food delivery at the Ultimate Baja, where a customer complained that lettuce was not put in a burrito that was ordered, as requested. There was also a customer complaint at the Sub Connection when a customer asked for bacon on a sandwich and was not given any, although there was bacon available at the Grill. Furthermore, students are confused about what lines belong to the Grill and to the Ultimate Baja.

 

Radek Lopusnik noted suggestions and comments that he received from faculty. He noted a request for Jazzman's to be open on the weekends and open later hours during the week.

 

Jeff noted that a contract will soon be finalized with a company out of Boulder, Rocky Mountain Sustainability.

Radek noted additional faculty suggestions to have the salad bar returned to the Overlook. A discussion of per ounce pricing versus flat pricing ensued. Advertisement is needed for directing customers to the Lodge salad bar.

 

Radek noted that the retail areas or website needs more information for low fat and vegetarian nutrition information and options. A comparison was made to Colorado College and its food service management of website and nutrition information.

 

Radek noted that on Fridays the Overlook seems to be running out of food.

 

Radek noted that a request was made for University Hall to have a food area. Jeff noted that he would call the Dean of Nursing to discuss this further.

 

Radek noted a report that Columbine Coffee Cart's coffee tasted strange lately and possibly might be the water. Sean also noted the possibility that coffee may taste different due to the way it is being made or who is making it.

 

Radek noted that break times have limited food choices on campus. It was noted that more information about food service options during breaks should be announced.

 

It was also noted that one Sodexho staff cashier at the Overlook did not know what was available at the Lodge or how to direct a customer to the Lodge.

 

Sean distributed the ACUHO-I/EBI Resident Study for review by the committee.

 

The meeting adjourned at 1:15 p.m. The next Food Service Advisory Board meeting is April 27, 2006.
